Good thing to eh, nothing like a few ales and singing the NZ national anthem "ten guitars" while the Hangi's cooking ..

Try this at the next BBQ

Battered Mussels


INGREDIENTS:

Mussels - 1 Dozen

Egg - 1

Salt - Pinch

Pepper - Pinch

Flour - 1/2 cup

Milk - 1/4 Cup

Beer - 2 Tblspns (optional)

Cream of Tartar - 1teaspoon

Cooking Oil

METHOD:

Beat the egg and add flour, milk, beer and seasoning.

Add cream of tartar and mix all ingredients well.

Dip mussels in batter and deep fry in hot cooking oil.

Turn regularly until golden.

Drain on absorbent paper and serve.

Or take a dozen NZ greenlip mussels, some cheap fish and cheap prawn flesh..
add little bit of fresh garlic..

Beat the shut out of the lot, or chuck in a blender until rough chopped.

Press a dollop firmly into a serving spoon or in the palm of your hand and dip into beer batter (as above) and deep fry..

Snip snip bobs ya auntie eh

Viet Nam and Cambodia are wonderful.

Booked to go to Laos for the first time in July, but canceled the trip after i read how the weather at that time of year can make overland travel impossible to do
Is September a good month because i'll try to get to Laos in 2011 ?

How about some recipes Steve ..


Maoris use this island dish alot,, haven't had it since I was in Fiji last..



Palusami: Corn Beef in Taro Leaves

I was introduced to this version of the famous Samoan dish several years ago, at Turtle Island Resort in Fiji. This Palusami recipe includes canned corned beef, coconut cream, and onions which are formed into bundles, wrapped in taro leaves, and baked. Other common fillings for Palusami are fish, shrimp, and meatless Palusami containing only coconut cream mixed with onions. I often make the corned version using spinich leaves instead of taro and some recipes use Luau leaves.

Ingredients:
1 can of corned beef (#3 size)
1 cup finely chopped onions
Unsweetened coconut milk
10 young taro leaves, or 2 pounds of fresh spinich
Aluminum Foil

Instructions (Stuffed Leaves):
Cook onions in butter until tender. Mix with corned beef and coconut milk and forum the mixture into bundles. Wrap bundles with taro leaves or spinich, and bake 30 to 60 minutes at 350 degrees.

Instructions (Casserole)
Line the bottom of an 8 or 9 inch square pan with half the taro or spinach leaves. Cook onions in butter until tender and mix with corned beef and up to 8 ounces of unsweetened coconut milk. Pour the mixture over the leaves, and top with the remaining leaves. Cover pan tightly with foil and bake at 350 degrees for 30 to 60 minutes.

I'll let you know when we get back in Oct!

Never to to Laos before. I expect the weather will be much the same as northern Cambodia at that time of the year (ie late wet season but with rain tapering off, sunny, warm weather)

Ancient, a Binny Bob tip. If you plan on visiting Angkor Wot, check out the hotel named Stum Siem Reap, in Siem Reap
